Recipe: No5 Fried Rice

No. 5 Fried Rice

3 tbsp neutral oil

Handful of your favorite mushrooms, sliced

2 eggs, beaten

3 cups leftover white rice

1/2 white onion, chopped

4 oz. Brothers Artisanal No5 Beef Jerky, chopped

1 bunch scallions, thinly sliced

1 tsp sugar

Kosher salt

1 tbsp Soy sauce (optional)

Chili oil, sliced shallots, Thai (or sweet) basil, Cilantro, and/or mint, for garnish

Heat oil in a wok or nonstick skillet over moderately high heat. Sautee mushrooms for a bit, then add eggs and cook, stirring, until set. Add rice and continue to cook for three or four minutes, stirring occasionally. Add onion, jerky, scallions, sugar, and a pinch of salt, and cook, stirring, for another few minutes. If you like, add soy sauce and cook for another minute. Serve hot with garnishes.
